After facing the shell with a kitchen scissors , put It in lukewarm water and rub it with my fingers to peel off the thin skin. Divide it into small pieces and freeze. I think if I peeled it all at once, my fingers seemed to hurt, so I peeled it in three groupes The third time I could do it quickly. The photo is of the last third. Beautiful jade color! I enjoyed the first 1/3 with cooked rice. I could make it delicious!
